Chicken and Avocado Quesadillas
You will need:
For the quesadillas:
- x1-2 Chicken breasts
- 1 Freshly squeezed lime
- 1 Green chilli (optional)
- Low fat/Protein cheese (optional)
- Wholemeal tortilla wrap
- 1/2 tbsp Coconut oil
Optional Side dish, Spinach ,chorizo and cheese skillet:
- 50g chorizo ,sliced finely
- 8 cherry tomatoes
- 1 Garlic glove crushed
- 3 generous handfuls of spinach
- 2 Tbsp of pine nuts
- 1/2 ball of low fat mozzarella
Marinate chicken breasts in the lime juice along with a pinch of black pepper and your green sliced chilli . Leave for around an hour.
Heat coconut oil in a non stick pan, add chicken breasts and cook until they start to turn golden.
Add any remaining lime juice and slowly fry the chicken until it is cooked through.
Remove from heat and using two forks shred the chicken breasts.
Take your wholemeal tortilla wrap , place the shredded chicken on top , slice your avocado finely add this along with chopped coriander and cheese if your using it then fold and wrap.
Again use a non stick pan heat , rub a small amount of coconut oil on your wrap and add to the pan.
With a spatula gently flatten the wrap and cook until golden on both sides. slice in half and serve with a wedge of lime.
Add your sliced chorizo to a frying pan ,cook until it starts to slightly crisp.
Add your tomatoes, garlic , spinach cook on a high heat until the tomatoes start to split and spinach starts to wilt .
Pop your mozzarella randomly over the top, reduce the heat and let it slowly melt , scatter your pine nuts over the top and serve.
