Healthy Choice Chicken Kebabs
You will need:
For the Kebabs :
x2 BBQ skewers
x2 Chicken breast , diced
x3 Tbsp of zero fat plain yoghurt
Juice of 1/2 a lemon
x1 Tsp paprika
x1 Tsp garam masala
x1 Tsp ground coriander
1/2 Tsp chilli powder
1/2 tsp turmeric
For the Dressing:
x2 Tbsp of zero fat plain yoghurt
1/2tsp dried/fresh mint
x1 garlic clove crushed
squeeze of fresh lime
Handful of rocket
Fresh chopped coriander
Red slaw (available from the fruit and veg sections in most supermarkets)
Mix together your yoghurt , spices and lemon juice.
Add the diced chicken breast to the yoghurt mixture , cover with cling film and allow to marinate for at least an hour , but the longer the better !
Once the chicken has marinated place it on to the BBQ skewers and place on a baking tray.
Pop into the oven at around 180c for approx 20-30 minutes or until the chicken is cooked through.
Meanwhile whilst your chicken is in the oven mix together your dressing ingredients and then place in the fridge.
Lightly toast your wholemeal pitta , top with red slaw , rocket and lay the kebabs on top
Drizzle the dressing over and sprinkle with fresh chopped coriander and a little squeeze of lime.
