Makes 4 servings
You will need:
- ½ a small red onion finely diced
- 1 fresh red chilli deseeded and finely sliced
- 1 large ripe avocado
- handful of fresh coriander
- 3 cherry tomatoes finely chopped
- 1 limes
- ½ tbsp olive oil
- Chop the red onion , tomatoes, chilli and avocado together until well combined.
- Add roughly chopped coriander, the juice from the lime and the olive oil.
- Season with black pepper and serve with some extra coriander leaves and sliced chilli on top.
